In Search of the Best Pasta in NYC — Our Journey Ends in Gramerc

Honestly speaking, it may be overwhelming to find really good pasta in New York City. Italian restaurants are located everywhere, hundreds in all and each of them professes to be the original, the real one. However, when you have ever taken a bite of an ideally cooked, home made pasta and believe like you had been shot back in time and found yourself in a teeny trattoria in Rome or Bologna, you know that is hard to come by. And when you get one you do not lose it.

This was what was experienced by us when we had an encounter with Novitá in Gramercy.

New York City and Its Love Affair With Pasta

New Yorkers take their food seriously. Whether it's a $1 pizza slice or a $40 entrée, this city has opinions — loud ones. And when it comes to Italian food, the bar is incredibly high. People travel across boroughs for the best pasta in NYC. They wait in lines. They make reservations weeks in advance. They argue over whose carbonara is better.

So when someone tells you they've found the best pasta in New York, you listen.

A Little Place on East 22nd Street

Hiding away on the East 22 nd Street in the midst of the Gramercy, Novitá does not scream at your attention. No flashy display or excessive decoration is attempting to satisfy you before you have sat down. Instead, it also greets you in a fashion that only a good Italian restaurant ought to, that is, in a very warm, merely, and with the scent of something unbelievable in the kitchen.

Novitá was opened in 1994 by chef Marco Fregonese, and it is a local restaurant which has lasted more than 30 years in the neighborhood. That is enough to tell you something. When the restaurants in the city open and close quicker than you can even place a reservation, thirty years of regular customers is not a coincidence. It is a test of consistency, quality, and sincere desire to cook Italian food.

The Pasta — Where the Magic Happens

Now, let's talk about what you actually came here for — the pasta.

Novitá's pasta menu is the kind that makes you read it twice, then a third time, because you genuinely cannot decide what to order. From classic Roman tonnarelli cacio e pepe to rich, slow-braised gnocchi with beef short ribs, every dish feels like it was made with real intention.

The homemade spaghetti with clams and zucchini flowers is a standout — light, briny, and deeply satisfying. The kind of dish that makes you slow down and actually pay attention to what you're eating. Then there's the pappardelle with lamb ragù and porcini mushrooms — hearty, earthy, and packed with flavor in every bite.

For pasta lovers who appreciate the classics, the gramigna carbonara — made with eggs, cream, pecorino romano, Italian bacon and black pepper — is comfort food at its finest. No shortcuts, no cream-heavy imposters. Just the real thing.

And if you're feeling a little adventurous? The black squid ink spaghettini with mixed seafood and spicy tomato sauce is dramatic in the best possible way — bold, briny, and absolutely delicious.

This is why food lovers searching for the best pasta in NYC keep finding their way back to Novitá.

It's Not Just About the Food

Great pasta is one thing. However, it is not just the dinner that makes the Italian dining experience great.

The atmosphere is distinctly Italian at Novitá, in no hurry, with a relaxed and pleasant feeling. It is the space to have a date night out, or just meet an old friend or the place you would like to have a meal to yourself with a glass of wine. The service is not intrusive but sensitive. The wine menu will be carefully selected to go with the food. And its outdoor sitting space ensures that it is among the more charismatic al fresco dining places in Manhattan; particularly during a cool evening when the city seems a bit magical.

Seasonal, Authentic, and Always Fresh

So, Is It Really the Best Pasta in NYC?

That is a really audacious statement in a city of amazing food. And this is what we know, one of the years it has taken us to visit Italian restaurants all over Manhattan, the Flatiron, the West Village, the Upper East side, and our destination of choice is Novitá. It is our place that we recommend to our out of town friends. It is where we consider going when it is a cold Tuesday and we only crave a bowl of something warm and homemade and real.

The greatest pasta in NYC does not necessarily have a lengthy queue or name of a celebrity chef on the window. In other cases there is a somewhat remote part of Gramercy where a cook has been refining his culinary skills in more than 30 years - at which every serving of pasta explains why he has never relinquished it.
